Pea sprouts, also called pea shoots, are exactly what the name implies—peas that have been allowed to sprout, but not grow. They’re created from dried peas and are edible. You may find them sometimes used in salads, stir fries and more. Pea shoots are packed with nutrients including vitamins A, B6, C, E & K, folate and more.
